For cooked sauces, a good tin of tomatoes is often as good as fresh, and out of season it is frequently better than the pale, firm tomatoes in the shops. Fresh wins for anything raw, and at the height of summer for quick sauces; otherwise we reach for the tin without a second thought.

There is a quiet snobbery around tinned tomatoes that doesn't survive a February. A good tin tastes of ripe tomatoes all year. A watery winter tomato tastes of the lorry it came in on. Fresh is a pleasure when it is good, not a moral position, and we use both.

## When fresh wins

- **Anything raw:** salads, bruschetta, panzanella, a plate of tomatoes with salt and olive oil.
- **Quick summer sauces:** ripe tomatoes, briefly cooked with garlic and basil, have a fresh, sweet brightness that is hard to get from a tin.
- **When they are genuinely ripe:** deep colour, heavy for their size, giving slightly when pressed, and smelling of tomato at the stem end.

## When the tin wins

- **Out of season**, in practically every cooked dish.
- **Long-cooked sauces, soups and stews**, where consistency matters more than fresh sparkle.
- **Weeknights**, when nobody wants to peel and seed anything.

## Whole, chopped or passata?

**Whole peeled tomatoes** are our default. You can crush them by hand to the texture you want, from rustic to smooth, and they usually come in a thick juice. We find the quality more consistent than chopped, and they are the most versatile tin on the shelf.

**Chopped tomatoes** are convenient for quick sauces and stews where you want visible pieces. Some brands are firmer and take longer to break down; if they stay stubbornly chunky, mash them in the pan or blend.

**Passata** is smooth, sieved tomato. It makes fast, silky sauces, pizza bases and soups, and it is the quickest to cook since there is nothing to break down.

**Tomato paste** is concentrated and intense. It isn't a substitute for a tin, but a spoon fried in oil until it darkens gives depth to almost anything.

**Cherry tomatoes in a tin** are sweet and pop in the pan; lovely for quick pasta.

## How to choose a tin

Brands vary more than you'd think, so try a few and stick with the one you like. When comparing:

- **Read the ingredients.** Tomatoes and tomato juice or purée is the simplest list. Some add salt, acidity regulators or basil; none of that is a problem, but it changes how you season.
- **Look at the colour** when you open it: deep red is a good sign.
- **Taste a piece straight from the tin.** Sweet, bright and tomatoey is what you want. If it is sour or tinny, it will need more cooking and more correcting.

A cheaper tin can still make a very good sauce. It may want a longer simmer, a knob of butter or a pinch of sugar. /food/tomato-sauce-tastes-flat/ has the fixes.

## Cooking them well

Give tinned tomatoes some time. A gentle simmer until the sauce thickens and the oil glistens at the edges drives off the raw, metallic edge and concentrates the flavour. Rinse the tin with a splash of water and add it to the pan so nothing goes to waste.

## FAQ

### Should we buy San Marzano tomatoes?
If you like them. Some cooks swear by them, and they usually cost more; whether the difference is worth it is a matter of taste, and plenty of other tins make excellent sauce.

### Can we use tinned tomatoes in a salad?
Not really. They are soft and cooked. In winter, good cherry tomatoes, roasted peppers or even a few sun-dried tomatoes will make a better salad.

### What do we do with a half-used tin?
Move the rest into a covered container in the fridge and use it soon, or freeze it for the next sauce.

### Is it worth peeling fresh tomatoes for sauce?
For a smooth sauce, yes; score a cross in the base, drop into boiling water until the skin starts to lift, then into cold water. For rustic sauces, we usually don't bother.
